This is the quickest, easiest, most flavourful vegan fusion taco recipe. Trust me. We'll be hitting the crispy vegan fish fingers with some incredible flavours to make this a speedy meal to remember. Once you make these, you'll be eating them every. damn. day/night. THIS RECIPE SERVES 2 PEOPLE: SESAME GINGER AVOCADO 2 ripe avocados 1 knob ginger 1 clove garlic Lime juice 6-8 vegan 'fish' fingers (aldi's are the best. You can use vegan chicken nuggets if you can't find fish fingers but they're amazing with the fish so fingers crossed you can find them!) SAUCE NUMBER 1: Vegan mayo Sriracha or Gochujang SAUCE NUMBER 2: Sriracha or Gochujang 1 tsp brown sugar 1 tbsp sesame oil 1 clove garlic 1 tsp vinegar (white wine vinegar/cider vinegar/rice wine vinegar etc) 1 tbsp veg oil RED CABBAGE: 1 small wedge red cabbage 1 tsp sesame oil TORTILLAS: 220g plain flour 1.5 tbsp olive oil 1/2 tsp baking powder Spring onions Salt
