I used to eat tuna melts regularly. I particularly liked the ones from your classic coffee shop chains but not anymore folks. Nope! Because we like the planet and know that something equally delicious can be made with simple cupboard ingredients of the vegan variety. Hear me out...because this satisfied all my tuna toastie cravings.
All you’ll need for this delicious, speedy, game-changing lunch is (serves 1-2)
1/2 tin chickpeas (drained and rinsed)
A few tbsp vegan mayo
Jarred green olives, and brine
1 tsp capers
1/2 or 1 tsp dried dill
1/2 tsp dijon mustard
Salt and pepper to taste
Two slices of bread
Vegan cheese (Aldi’s is the bomb.com)
🥪 Mash the chickpeas then mix everything for the 'tuno' together. Feel free to adjust the measurements - everyone makes their tuna mayo a little differently, so just taste and adjust as you go.
🥪 Butter both sides of your bread. Slice some cheese then layer one piece of bread with the cheese and the other with loads of 'tuno'.
🥪 Place in a nice hot, dry frying pan over medium heat, cook on each side for about 2 mins or until the cheese is steamy and melty.
